GAxe with Adjudicator's Shield is probably the most braindead setup you can use in PvE, especially on NG where health regen will easily keep up with the damage you take. what i've done twice now is make an entirely magic/faith build, 40 int and faith, you'll be able to heal yourself and also use second chance in case anything actually gets close to you. Invest in Intel and magic power and get yuria from 1-3 for Firestorm, which kills everything. .
